TODAY on MHTV: It’s finally here: I’m making the winning recipe from our Weeknight Dinner Challenge! Pam Glynn sent in an easy, delicious, hearty recipe that won us over instantly. This one-pan dinner has got it all: flavorful marinated chicken, healthy garbanzo beans, and juicy tomatoes. Then, everything is roasted until its golden and caramelized to perfection. To go with our “Winner Winner Chicken Dinner”, I’m making an escarole salad drizzled with a walnut-infused vinaigrette and a creamy dessert of rich rice pudding with sliced plums.

    looked SO good, I had to make it the same night! I agree with Kaye, the salt was a bit much and I will cut it in half next time, but the flavors were wonderful. I actually prepared the recipe and put it in the fridge to marinate… and then my husband came home and wanted to take me out for dinner. It was nice to know that I could count on this for the next evening! We did have leftovers and stretched this for another night with some basmati rice and a salad. Will definately make this one again.

    I was wondering if you ever thought of changing the
    layout of your site? Its very well written; I love what youve got
    to say. But maybe you could a little more in the way of content so people could connect with
    it better. Youve got an awful lot of text for only having 1 or
    two pictures. Maybe you could space it out better?
