Gingersnaps with Pureed Dates Cookies

Lucinda's grandmother loved gingersnaps and made this sweet, no-cook date treat frequently; partly because it's delicious and partly because it's fast and easy. The only ingredients you'll need are a container of dried dates and a package of store-bought gingersnap cookies.

Start by rehydrating the dried dates in a bowl of warm water; they just need a couple of minutes to plump up. Then, place the dates in a food processor and add about a tablespoon of the water they were soaking in. Pulse the dates until they become a paste.

Lucinda likes to scoop the date paste into a bowl and serve it with a sleeve of gingersnap cookies. Let everyone build their own date and gingersnap cookie sandwich--it keeps things simple and fun!
