Poffertjes (pancakes)

The street market at Albert Cuyp, Amsterdams largest open air market has many really cool finds: fish, vegetables, fabrics, clothing, antiques and Dutch and ethnic street food (my favorite!!). This is the first time I’ve had proferrtjes; puffy little pancakes served piping hot off the griddle. The vendor Andre makes them at lightening speed, pouring the batter into little (perfectly seasoned) cast-iron divets, turning them then picking them up with a fork eight at at time. Awaiting the hot little heaven-cakes is a large slab of Dutch butter. As Andre says, “you think we have amazing cheese? The butter is just as good.” Yikes, that’s all my butter-loving mom, Rose, needed to hear.

A little powdered sugar and you are good to go. When I asked if we could get a few less in our order, andre promised he’d return our money if we didn’t eat the whole thing. Now there is a confident cook! We helplessly ate them all, natch!

    I miss my daily dose of Mad Hungry. I’m calling the Hallmark Channel to tell them. I miss the daily recipes. Great stuff on former MH guests John Contratti’s site. It’s getting me through.

    Hello Ma Hungry friends! I keep reading comment after comment about people being upset with the Hallmark Channel USA for taking Mad Hungry off the air! Join me and contact them daily telling them you want Lucinda back on the air along with new episodes!

    I am a nurse. Every day, my patient and I watched Mad Hungry for new recipe ideas, especially during Holiday time. Please bring it back. She doesn’t like 2-3 hours of stifling interviews that is currently showing. It needs to keep her interest. The present shows don’t do that. Thanks much for listening to us.

    I am a Transit driver. Recently i had surgery on my knee and was out of work for 3 months. Started watching Mad Hungry for the first time and i got to tell you, i was hooked. I have printed so many new recipies for my family, i had to put them together in a spirol notebook so they would be handy to use in the kitchen. I have tried several
    recipies already, and i have never bought so many diferant kinds of cooking oils and cooking wines.
    I love to cook, just tired of the same things. Mad Hungry as inspired me to cook so many diffrent recipies:
