TODAY on MHTV: I had so much fun visiting with a fourth-grade class in Garden City, NY, last winter that I invited their teacher, John Contratti, to come on the show and share some of his favorite recipes: an easy, cheesy eggplant rollatini and a savory side dish of sauteed radicchio and endive tossed with chickpeas and walnuts.More from the show.

    I was unaware that there was a Hallmark Channel and a cooking show called Mad Hungry. I was made aware by your guests cooking website. It’s a wonderful channel. I will continue to watch. Love the recipes on the show today.

    I love the recipes the two of you made. They have inspired me to get out there and cook more. Lucinda, you are the best cook on television. I hope Hallmark Channel knows how great you are. Mr. Contratti, I follow your blog each day. I love seeing your recipes and the occasional celebrity pix. I admire how you have a dual career going.     Hi Lucinda,

    To begin, we made the eggplant rollatini you and John made together this week. It was so delicious. After dinner I showed the raddichio and endive recipes to my guests, which I haven’t made yet, but it looks good. We went through some of your recipes and then we visited John’s blog. This guy truly blows my mind. Yes, he has many great recipes, but as we were going through his posts, he was talking about his night at the TV Land Awards and posted some cool pictures. I think this is why so many people have connected with him. He’s a great cook who has a very entertaining site for people to check out. I can’ wait to see him again on your show. Many thanks!!

    Have to be honest and say I never heard of the show Mad Hungry. I learned about it when I attended The 10th Annual Iron Skillet Cook Off back in late Fall. One of the judges was guest cook John Contratti. He was a delight to chat with. I’ve been following his blog since I met him. I’m now enjoying watching Mad Hungry.

    I can’t wait to try these recipes with the eggplants I am growing in my garden. I have never tried eggplant, but this looks wonderful!
