Recipes from Today’s Show: Seafood Feast

TODAY on MHTV: I looove fresh seafood and I’ve picked up a few great pieces of fish and shellfish for a seriously good weeknight feast. Jumbo shrimp, kale and cannellini beans are wrapped in parchment paper bundles then baked in the oven; it’s quick, healthy and just plain old delicious. I put a twist on a classic trout almandine—pan-fried trout topped with toasted almonds—by adding a dash of cayenne pepper to the mix. Then, I toss fresh oysters with herbs, champagne vinegar and parmesan cheese and broil them until they’re golden and bubbly. More from the show.

    Dear Lucinda. I love all your recipes and have tried many to date. I am, however, just the last month, having difficulty finding print friendly copies of receipes. They are so minute I need a magnifying glass to read them and when I try to enlarge with Print Preview, the sentences are chopped off and incompletge. How do I remedy this problem to read your recipes from a print copy. Thanks for your help. Diane Crest.

    Lucinda – I love that red pan that you use all the time – it has a white interior and want one just like it – what is the brand name?
