Barely Touched Spinach
Once the spinach begins to collapse, it will only need about another minute before it's ready to serve.
- 1 pound baby spinach leaves, gently washed and drained
- 1 tablespoon butter
- Pinch of nutmeg
- Salt
- In a heated 3-quart straight-sided pan, melt 1 tablespoon butter. Add spinach bit by bit as the previous addition collapses and makes room. Stir in nutmeg.
- After the last addition, cook one more minute. Season with salt and serve warm.
