Orange Creamsicle Float
Inspired by a famous soda in Philadelphia made with mandarin oranges and traditionally drunk alongside the steak bomb, Philly Cheesesteak (page 68). This is a drink, dessert, and old-fashioned popsicle all in one.
- 2 Mandarin oranges
- 1/4 teaspoon vanilla extract
- 2 scoops best-quality vanilla ice cream
- Club soda
- Remove the rind from the oranges. Supreme the oranges into a small bowl and squeeze the juice from the membrane over them. Stir in the vanilla.
- Transfer oranges and juice to a tall glass. Add the ice cream to the glass. Top off with the club soda. Stir once and serve immediately with a tall spoon.

Just as this recipe deconstructs, reimagines, and rebuilds the Creamsicle float, you can reinvent the Good Humor classic King Cone. Take the same ingredients and layer them into a parfait.
NUTSHELL RECIPE: king cone sundae
Crumble up a sugar cone and place half of it in a tall glass. Add a scoop of vanilla ice cream. Pour some hot fudge sauce (see page 286) over it. Sprinkle on chopped toasted pecans or walnuts. Repeat, and top with whipped cream.
