Roasted Grape Tomatoes

Serves 16


  • 2 pints grape tomatoes
  • 12 sprigs fresh thyme
  • 4 tbsp extra-virgin olive oil
  • Coarse salt
  • Freshly ground black pepper


  1. Preheat oven to 425 degrees.
  2. Assemble grape tomatoes on a baking sheet and cover with olive oil, thyme, salt, and pepper. Bake until caramelized, about 20 minutes.
  3. Serve with goat cheese and crackers.
