MH Game Grub Inspiration Pt. 1

While the Game Grub Finals rage on, we thought it would be cool if we shared some of our own game day recipes, in case you were looking for another idea or two. So kick back, relax and get ready to grub hard. Sam’s post is below, and stay tuned for Lo’s tomorrow!

Sam’s Short Rib Grilled Cheese Sliders:

Savory short rib bits and oozing cheese sandwiched by crispy, buttery bread—what’s not to love? Born out of a necessity to do something with leftover short ribs/find something tasty to serve for the AFC playoff game, I turned to one of my recipes that I knew would rock the socks of just about anyone who tried it.

I had three small red wine-braised short ribs left over from dinner the night before (I adapted a Martha Stewart recipe, actually) and set out to make mini-sandwich history. They were pretty delish and, as a bonus, I was able to get two meals out of the meat—my Saturday night short rib feast and my Sunday afternoon football sliders. Awesome.

Short Rib Grilled Cheese Sliders

Makes 4 sliders

3 small cooked short ribs*

Bread

3/4 cup grated Colby Jack cheese

Two tablespoons salted butter

Shred short ribs and set aside. Slice bread into 1/2-inch slabs, and cut slabs into 2×2 squares, for a total of 8 squares. Spread a thin layer of butter on one side of every square and set aside. Bring a skillet up to medium-high heat and place each square, butter side down, into the pan.

Evenly distribute the grated cheese and shredded short rib onto each square, beginning with the cheese. Cook until bread is golden brown on the bottom then place the other square, butter side up, on top of the short rib and flip the sandwich. Cover with a lid for about a minute until the cheese gets soft. Remove the lid. Cook until bread is golden brown on bottom. Remove sandwiches from pan and serve.

*I adapted a Martha Stewart recipe for the short ribs, omitting the tomatoes and adding a couple cloves of minced garlic. The original recipe is here if you want to check it out.
