Recipe’s from Today’s Show: Elegant Weeknight Meal
TODAY on MHTV: One of the greatest things about fall is the smell of something delicious cooking in the kitchen and a fancy meal on a week night is not as hard to prepare as you might think. Rosemary and vinegar infused chicken is a cinch to make thanks to a simple marinade. On the side, sautéed mushrooms served over thick, creamy polenta are easy to manage and blend perfectly with the flavors of the chicken. More from the show.

Love the show and have already tried the poached chicken (morphed into soup, chicken tacos and chicken pot pie) My question with regard to today’s show and polenta.
Why can’t you mix the liquid with the corn meal cold then bring it to a boil? I do this and avoid the lumps that always occur with the sprinkle in method. But am I spoiling the results by doing this?
Also – I adore the red nailpolish!
This might be tomorrows dinner. I can’t wait to try the chicken.
My husband will love the mushrooms ( yuck)
It is so funny, I been making stuffed mushrooms for my husband and friends for years and I’ve not once tasted them. : )
Have a great Thursday
Love your show and tivo it every day! I’m making your vinegar glossed chicken and polenta for a dinner party tomorrow. Everything you show us seems so down to earth, do-able and delicious.
Thanks!
