Recipes from Today’s Show: Spring Pastas
TODAY on MHTV: Simple pasta dishes are a great way to incorporate fresh spring produce into your meals, plus they’re quick and easy to put together. I take campanelle (tiny, fluted pasta) and toss it with a no-cook tomato and basil sauce with some fresh peas. Then shrimp scampi over small pasta shells is even better with slices of crunchy asparagus, and, long ribbons of fettucine are dressed up with a simple lemon, mint, and Parmesan sauce. I absolutely love the lemon/mint/parmesan fettucine dish. Ever since I saw Lucinda make it on the Today Show, I’ve been in love with it! Thanks for a new favorite summertime favorite!
