TODAY on MHTV: One chicken can go a long way; whether you’re roasting it and saving the leftovers or poaching a whole chicken (something I love to do), you can easily get a few dinners out of all that meat. Chicken enchiladas are super healthy: toasted corn tortillas filled with shredded chicken and homemade salsa verde while chicken soup with rice helps to combat any colds that might be creeping up on you. Last but not least, chicken salad is a great way to utilize leftover poultry. More from the show.

    Dear Lucinda,
    Your show is fabulous. I love how real you are. I have four kids and enjoy that your recipes fit large families. I shattered my ankle and leg and was bed ridden end of Oct. Your shows were the highlight of my day. So upset that they changed the format. Somebody needs to put you back the way it was. A lot of us are mad mad mad about losing out on your regular programing. We want more of you.
