Today on MHTV: Today’s menu is filled with authentic Mexican dishes filled with simple ingredients with lots of flavor. A great example of that is my Mexican Corn: Lime juice, chile powder and cheese take your corn on the cob to a whole new level. I’m also going to whip up some Budin Azteca. Think Mexican-style lasagna; tortillas get layered with smokey poblano and jalapeño peppers, shredded chicken breast and Monterey Jack Cheese, baked in oven and topped with a bright salad of radishes and romaine lettuce. To drink, I’m making Vampiros; tomato and grapefruit juices are mixed with tequila and served in salt-rimmed glasses for a Tequila cocktail that doesn’t end in “rita”.

    That budin looks great! I had chicken enchiladas in Mexico at the Herredura Tequila Hacienda with romaine and radishes on top just like that, made by the family’s cook… very authentic presentation. IMHO, The corn would be even better with some chile powder sprinkled on top!
