Citrus Tequila Cocktail

Serves 8
Remember the tequila sunrise, with its tonal gradation reminiscent of a Mexican beach scene? This is an update on that retro stalwart. Serve these, along with cold beer, when entertaining with Mexican food.

INGREDIENTS

  • 2 cups orange juice
  • 1 cup tequila (8 ounces)
  • 6 tablespoons fresh lemon juice, from about 2 lemons
  • 1 1/2 ounces grenadine
  • Ice, for serving
  • 3 cups club soda
  • 8 strips lemon zest, for garnish

DIRECTIONS

  1. Pour orange juice, tequila, and lemon juice into a large pitcher. Tip pitcher at a slight angle, and carefully pour grenadine down side.
  2. Divide mixture among 8 ice-filled glasses, and top off each with club soda. Stir, garnish each with zest, and serve immediately.

TEQUILAS
No need to splurge on expensive tequila for this one, as it is mixed with several other fruit flavors. A garden-variety white (blanco) or silver brand is fine. But, if you are so inclined, tequila is a lovely spirit to sip on its own. Try a reposado (aged at least two months), an añejo (aged one year), or an extra añejo (aged a minimum of three years). All are derived from the blue agave plant native to Mexico.
