Recipes from Today’s Show: Easy Weeknight Entertaining

Published by

TODAY on MHTV: If you’ve got a party falling somewhere between Monday and Friday, don’t go crazy trying to pull it together. All you need is a few easy, make-ahead appetizers and you’re set. Gravlax—wild salmon cured in a fennel-infused mix—can be made up to a day or two in advance. Then I’m making shrimp cocktail with three different dipping sauces, and a no-cook platter of radishes with salt and olive oil. Since it’s a party, my friend Michelli is coming over to shake up some of her famous Brazilian caipirinha cocktails. More from the show.

    Hi Lucinda,

Love appetizers. I enjoy when friends have an appetizer party. I don’t need a sit down dinner.
My family made eggplant rollatini this weekend. It was wonderful. It was the first time I had it. I will no doubt be making it again.

P.S. When is your cookbook coming out???

Your method from your grandmother for fried eggs with a little water was the best tip ever. I wish I had known it years ago. Thanks for the tip.

    Hi Lucinda,

The Hallmark Channel must put you on more. 4 days a week is ridiculous. I made the raddichio and endive side dish last night for my family. Actually we had it as a meal. It was so tasty. Bravo to you and your guest teacher for sharing it with viewers.

In response to Dana, I too made the eggplant dish this weekend. It truly was a great dish. Wityh a loaf of bread, we were in heaven.
Can’t wait for the new cookbook also.
