Recipes from Today’s Show: Italian Comfort Food

Published by

TODAY on MHTV: To me, there are few things more comforting than the Italian meals I grew up with. My friend Randi Harris, a new mother, is stopping by to learn a few of my favorites: a cozy chicken livornese, braised in a rich stew of olives, capers, and plum tomatoes, and served with my easy arborio rice. For dessert, cool coffee ice cream topped with hot espresso. More from the show.

Easy Arborio Rice

Coffee Ice Cream Affogato

Watch ”Mad Hungry with Lucinda Scala Quinn” Mondays through Fridays at 12 p.m. ET/11 a.m. CT on Hallmark Channel.

    To Melissa (MSLO)

I see that you sometimes answer viewers questions. I’m trying to find the website to John Contratti’s cooking blog. I see some people know about it. He was my favorite guest of last season and would love to follow him also. Thanks for your help.

    Kelly

P.S. I hope Mad Hungry has him back on very soon.

Where are the attached videos to the recipes? Mad Hungry is the best cooking show and when a new “flavor” “Emeril comes along, it gets treated quite poorly.
Mad Hungry must be back at 11. Mark Marone at 11:30 and Emeril at 12. Get with it Hallmark.

I agree 100 percent with Terri. So sick of networks tampering with shows that are perfect right where they use to be. Mad Hungry 11:00 and 11:30 please.
Also, yes, please find out teacher John’s website. Being a male cook myself, I am a fan.

Please reinstate Linda Scala Quinn’s television slot back to the 11a.m to 12 noon time. She’s the best and her recipes are the most appetizing and easiest to imitate. Let Emeril get another time slot on Hallmark channel.

  • Lorraine October 3, 2011 at 3:09 pm

Hello: I agree with Terri, Allen and Frances.

Lucinda makes things very homey, explains easily, and I really miss her. Please bring her back to her l hour slot at 11:00am – 12:00noon.

  • Chelsea October 3, 2011 at 3:16 pm

I was so looking forward to watching Lucinda and her new season. I don’t have cable and have been following her via marthatstewart.com I’m wondering if anyone knows why or when we can watch episodes online again??? Super bummed 🙁

  • Pete October 3, 2011 at 4:43 pm

    Lucinda,
As you can see we all agree. You belong at 11:00 for a full hour. Being a male viewer, I too would like to know teacher John’s cooking blog. Can you find out? I know someone mentioned it recently. Maybe they can help.
Back to 11:00-12:00 for you Lucinda and Mad Hungry.

    Pete

Please come back for the 11:00 and 11:30 time slot and let Emeril find another ti e and station if need be. Your’s is the best cooking show on the air. Your easy and natural demeanor is such a pleasure to watch. I miss not have g the two shows. I know Emeril is a friend of Martha ‘s brut he can fi d another time or tv network. Love your show!!.

  • Linda Sousa October 4, 2011 at 8:24 am

I agree, get rid of Emeril. His cooking is too spicy. I don’t like anything he makes.

My husband and I love Lucinda.

  • JoAnn October 4, 2011 at 10:05 am

I agree with Chelsea’s comment 100% and then some. I don’t have Hallmark and I relied on the Mad Hungry show archive on marthastewart.com to view the clips from each show. I used the show archive to plan meals every week. After the new season started I got on marthastewart.com to see the much-anticipated first new episode of Mad Hungry, and was extremely disappointed to see that the show archive had been removed from the website. I am totally going through Mad Hungry withdrawal!!!

I hope someone from the website sees the comments from people like us who are incredibly disappointed by the video clips no longer being available. I appreciate that the recipes are posted, but reading recipes isn’t nearly as inspiring as seeing Lucinda prepare them.

Watching Lucinda is like having your best friend in the kitchen with you, and I have learned so much from watching her. My family has loved every single Mad Hungry recipe I’ve made – each one has been a “keeper.” Please bring back the show archive!!!

I made the chicken Livornese last night and it was delicious! My husband loved it! What I really appreciate about Mad Hungry w/ Lucinda Scala Quinn vs. Emeril, is she always makes meals that I would actually make. Her ingredients are easy to find and the meals are so practical. I get a lot of meal planning advice for my growing family from watching her show.

Emeril does not have very good recipes. None that I have ever been interested in. Why can’t Lucinda have her time slot back? Also why does’nt the channel rerun Martha and Lucinda at night.Who wants to watch little house on the prarie! I can’t always watch Marth during the day but would love to see her shows at night. There are no really good shows on in the evening. Bet they would be very well recieved.

  • kathy October 5, 2011 at 1:24 am

    Really…….missing Lucindas videos.

  • Loretta Jones October 5, 2011 at 1:58 pm

I love you and your show. I have used many of your down to earth recipes and would like to continue to use them. For this season I would like to know how to print those recipes off in a printer friendly form.

  • gayla October 5, 2011 at 11:45 pm

how do you cut up a chicken into 18 pieces ???

  • gayla October 5, 2011 at 11:46 pm

I love Mad hungry and I want it back too .

  • Barbara Westwood October 11, 2011 at 12:43 pm

I so agree with comments made above.
I AM AN AVID LUCINDA FOLLOWER.
Please keep her time slot, 1 hour perfect.
I have become a good cook because of her.
Really Emeril might be famous but he would never inspire me to cook.
Lucinda knows exactly what we need.
Bring back her time slot, do not mess with success!
    Barbara

I am from Spain and the only way I can watch the show is online. It is so much better to follow the recepies when you can watch them. Also Lucinda makes everything look so easy and delicious…. Being a mom and having to cook a meal everyday , you just run out of ideas. Please let us watch the show online.

  • CR October 12, 2011 at 4:58 pm

  • Sophia Vacratsis October 13, 2011 at 7:35 pm

I am in Canada and loved Lucinda on Everyday Food which I get on the Detroit PBS station. Found Mad Hungry during our winters in Florida and love all of your recipes. Was overjoyed to find your videos online since you are nowhere to be found on Canadian Cable (WHY NOT???) And now your videos are gone. Am so disappointed. You are a terrific down to earth personality and I love your cooking style. Wish I could find you on Cdn. T.V.

  • Betsy October 15, 2011 at 12:10 am

We love Lucinda! We need the archives for past recipes and directions. Please consider replacing your programming director. This is ridiculous. My whole cooking style has changed with Lucinda’s directions; my family expects this fabulous cooking! Get with it Hallmark! We don’t want Emeril. Change his time if he has a contract.

  • Jessie Turner November 1, 2011 at 1:15 pm

Love Mad/Hungery REcipe’s. Not too forn of Emeril.

  • eileen November 17, 2011 at 6:21 pm

  • Carol Jansch January 12, 2012 at 12:25 pm

where is the 3-meat meat loaf shown in the second half of today (Jan 12 2012) after the 3 mustard chicken segment? these recipes are so hard to find! and i agree with all the posters, Lucinda’s show tops Emeril’s by a mile.

Looking for eggplant parmesan that she made to look like a sandwich, with one of her sons.
