A Little More on Fish

I ate this dish recently at a restaurant and the flavors were so well drawn. Soba noodles tossed in a mild but delicious Asian flavors, cilantro-mint pesto, seared wild Alaskan King Salmon, topped with a lightly savory-sweet, mildly pickled red cabbage slaw. At first I thought there might be too many elements (enough anyway that the margin for wrong was slim) BUT–it was so fantastically delicious. And, just seeing this pic made me want to recreate it at home soon.

Tomorrow I’m off to Chicago for The Taste of Chicago food festival: the largest in the USA.

I’ll be demoing from MSL, EDF and Mad Hungry and signing books and I even have a treat up my sleeve too. I’ll be joined by my colleague/friend and fab cook Jennifer Aaronson whose the editorial food director of Martha Stewart Living magazine. She makes so many of the great recipes in MSL. We’ve got some great dinner plans and a few extra minutes too. Does anyone suggest a Chicago must-stop for us??

    Love Chi-town, LSQ! Your sked sounds packed and I'll bet you have epic dinners lined up. Natch, everyone has to have a hot dog there, so here's my fave: @hotdougA recent tweet: "Game of the Week 6/23~ Bacon and Cheddar Elk Sausage with Bacon-Garlic Mayonnaise and Black Mountain Garlic-White Wine Cheese." And duck-fat fries are served only on Fri-Sat. Had enough dogs? How about Bayless'Xoco?

    I will second Hot Chocolate. If you want something really different, check out Revolution Brewery. It's in the Logan Square neighborhood right off the EL train and it's great food and great people watching.

    Mrs. Scala Quinn, Thank you for the information you provided to me yesterday at the taste of Chicago during your book signing(This is the college student who asked how to start out and prepare to get into the food business)!     mcbrossetti,Wow-I'm glad you found me here. I was a bit rushed and wanted to tell you a few more things. First off, start immediately (if you don't already) keeping a journal of all the things you're cooking, tasting at restaurants or reading about food. And, take pictures too–often. As you review it you'll begin to see the paterns that define you as a cook. And, if you enjoy writing then write about food too in this journal. Record meals, ideas, a market–whatever inspires you.I really suggest you get a restaurant job in the kitchen. Not permanently if that isn't your interest but at least for a stage. It'll give you very good training on organization, strategy and most of all techniques. Look on line at job sites for food jobs and get a sense of what is out there. THe media landscape has changed so much that working on magazines or books isn't that simple an entry anymore. But good food content be it writing or recipe development is a hot commodity–especially for social media.Anyway–there is no one way to get to the job you want. Just keep pursuing your passion.     I am so sorry about my delayed response to all the info you posted to me! Thank you so much! I am already looking into doing everything you recommended to me. Being a college student with a low income who is working 40 hours a week and doing summer school as well, cooking is hard for me right now. But weekends will soon be devoted to it! Once I get cable, I will definitely be tuning into your show as well! Thanks again! Hope to be watching soon!
