Recipes From Today’s Show: Chicken and Dumplings
TODAY on MHTV: Fluffy, herb-flecked dumplings are added to a pot of tender chicken and broth—it’s the perfect one-pot meal to cozy up to in the cold weather. Something I like to include in this dish is vegetables that don’t get enough love—turnips, rutabagas, and parsnips. They’re delicious, good for you and good for adding flavor to the pot. Keep the sides light and serve a simple green salad with a ranch-style dressing. And, if you want to try one of the best chocolate bundt cakes you’ll ever have, this recipe comes from my old boss Dolly—it’s rich chocolate glaze makes it the perfect occasion cake. I’ve made this dish several times and it’s now one of our “regulars.” I’ve also prepared it for visiting relatives, and they’ve added it to their repetoire as well. What I like to do is remove and discard all the vegetables once the broth is finished because they get too mushy for my taste. I then dice some additional onion, carrot, and parsnip, saute the veggies in butter, and add them back to the liquid just before serving. My 5-year-old daughter likes to eat these bite-sized chunks and so do I. We’ve tried the dumplings with parsley, but they are not quite as with the dill.
