    I missed the part on how to poach a chicken, too, and
    my computer won’t play the video legibly. Could you just note how long, etc., to poach it?

    These were delicious. I lived in Mexico for many years and these are very authentic. I did add a handful of chopped cilantro to the sauce in the blender. I was going to “chicken out” about the salad on the top. But you were correct… it is perfect – perhaps that is why you have the cooking show!!! Keep it up – I love your show!

    The chicken enchiladas are amazing and the salad really makes them. I left out the radishes but will add them next time. I just made the chicken soup with rice and it was amazing! The fastest and tastiest soup I’ve ever made!! I added an onion and a couple carrots and a little chicken base to the water for poaching the chicken. Great broth!

    These were so delicious and easy! I took the short cuts and used a rotisserie chicken and store bought tomatillo salsa. I can’t wait to make this again and experiment with different fillings! Thank you!

    Now, I can’t find the video attachments to earlier recipes of Lucindas. I know recent ones didn’t have them, but now the older ones. Is this what it means to be moving “forward”. Can someone help us out?

    I’m sure Lucinda is so busy. I see that you answer sometimes. I DVR the show each day. But the show hasn’t been taping in a long time. It only tapes First Run episodes. Can you tell me when we will be seeing new ones. I wouldn’t want to miss them.

    To answer the poaching questions: On the video Lucinda says to put water and chicken in a pot, bring to a boil. Then turn down and simmer for 50 minutes. That’s it.

    Someone told me that Lucinda has said Mad Hungry is continuing with new shows. If that is true, why hasn’t it been said here? I watch and look every day, but never a word of it.

    To Helen: You can program your DVR to record both “First Run” and “Repeat” episodes or at least my system allows this option. I record everything because I didn’t start watching MH until sometime in August or September 2011.

    poaching? and she says she has two quarts of chicken stock? so,at least two quarts of water to poach? and she doesn’t say anything about skimming the fat off?

    i thought i was the only one with audio problems!

    I too am anxious for the scalloped potato recipe. I want to serve it at a dinner party next week. Why won’t it show up?
