Epic Fried Chicken Situation

While many of my brethren and sistren are doing January cleanse and clean-up routines, I find myself sinking into a comfort food vibe. It doesn’t seem like smoothie weather to me—I want deep hearty soups, fluffy pancakes and homemade bread. As for the ‘health’ part, I just make sure to eat lots of fruits, vegetables and healthy liquids (no soda) especially lots of water.  On Sunday, my son and his girlfriend were over and someone started talking about fried chicken and that was IT! Only problem was that my husband has been preferring gluten-free eating of late, which throws a definite wrench in the works. To my utter surprise the GF fried chicken we made was better than any because of the GF flour,  which is super dry. Mixed together with some cornmeal, cayenne and salt—you could not imagine a crispier-on–the -outside, juicier-on-the-inside piece of fried chicken.  And, the mashed potatoes, biscuits and collards greens made for a delicious Sunday night supper.

    My hubby does gf. I’ve found rice flour not only is great for fried chicken but also makes a nice roux.

    Try soy flour.Its light and tastes great. However, you will need to use club soda to make this flour rise. I will be happy to help you!

    I feel dumb what is the recipe? Just replace the flour with GF.

    Jo — GF is te gluten free flour that Thomas Keller developed, you can get it William Sonoma.

    Gluten Free diets are of no health benefit to anyone unless they suffer from celiac desease – Straight from the mouth of Dr Oz. However, it sounds like GF flour makes a delicious crispy fried chicken. 🙂

    Jo and I went out for a Fried Chicken weekend. Both Friday and Saturday nithgs were all about the Fried Chicken. This was on top of the chicken that I had earlier in the week and the stuff we had two weeks ago. The great thing… We’ve been eating at different places the entire time. So far, Chicken Maru is leading the charge for price and tastiness among traditional Chicken places. For boneless, it’s The Frypan all the way!
