Mad Hungry MY Way: Chile-Citrus Chicken Breast

This week’s Mad Hungry My Way comes from Val who doctored up the Mad Hungry Chile-Citrus Turkey Breast to suit her needs (and pantry!):

After checking out the Mad Hungry blog last Monday, I knew I wanted to make the Chile-Citrus Turkey Breast sometime that week. I was going to be making some minor changes – I had some ingredients at home that I wanted to use up and they would be acceptable substitutions. The only thing I would need to pick up is the turkey. Once I got to the grocery store, it was going to cost $24.32, which was a lot more than I wanted to spend, so I got a quartered chicken as an alternative.

Instead of using the chiles, I used a combination of chili powder, smoked spanish paprika, chipotle chili powder, South African Smoke seasoning blend from Trader Joe’s and some hot sauce that I picked up in DC a couple months ago, Uncle Brutha’s Allsauce No. 10. I had clementines, so I used those with the lime. Realizing I would need some additional liquid I searched the refrigerator and found some tomato jam from Katchkie Farm – it’s sort of like a Worchestire-heavy barbecue sauce – that loosened things up.

I only let it marinate for 20 minutes or so (we were getting hungry!) and put it in the oven. It was so easy, super flavorful, and my boyfriend and a friend of ours loved it! I added sweet potatoes, corn and a ridiculously easy baking powder drop biscuit. And of course a delicious, and potent, Belgian-style brown ale.”

    I can’t find the recipe from last week….the chicken wings, with the cola and brown sugar…how come???

    Lucinda,

    Love your work. Doesn’t seem to be new shows for awhile. Do you still do your radio show? In the interim for the return of your show, can you get John Contratti as a guest, to talk about his blog, his recipes and all the attention he has received since cooking with you? I would really love to learn more about him. And please, release a new cookbook.

    Maybe they can give the station and time of the radio show? I was unaware of it. That would be nice to hear Lucinda talking. Have to say I’m in full agreement, that teacher guy has struck a chord with viewers/followers. I follow his blog every day. It’s an enjoyable blog to browse through. Don’t know why Mad Hungry hasn’t had him back yet? Also I’m a little confused with the new format of this blog. Where can questions be asked about the daily recipes???

    We all know where “This Week on Mad Hungry” is located, but there is no place to comment and ask questions about the recipes. Also, it would be nice if responses to the dedicated followers can get a response once in awhile. So many of our comments and questions are so obviously ignored. Why have a blog if you can’t answer people’s questions? Some of the questions that are answered are so selective without addressing what viewers really want to know.

    Hi Lo,

    Great job on the recipes being all in order. Apparently we are concerned that the same post has been up for days. Hope Lucinda and evryone is okay. I have to agree that some questions on daily blogs are never answered. So here are the questions that have been asked on this post and one from me.

    1. Where is the chicken recipe with the cola?
    2. Does Lucinda have a radio show?
    3. If yes, when is it on? what station?
    4. Can you bring back teacher John to the tv show and maybe the radio show? (so obvious he has a big following with his blog and other things that are going on)
    5. When is Lucinda’s new cookbook scheduled to be released?
    6. My Question: I believe Lucinda has had other cookbooks. Can I get the titles?

    Hi Everyone,

    I’d like to address all of your questions, comments and concerns. We really appreciate all of your patience with the changes in the blog. In the very beginning, before there was a television show, a facebook page, twitter account, recipe contests, or anything else- there was LSQ and her blogger account. She blogged after work and on weekends about all things in her life, what she was cooking, what her boys were doing– but then things changed.

    In the past two years we’ve been on an incredible journey with great things and growth happening to mad hungry. We’re so excited about all of the changes, but noticed recently that the heart and soul of mad hungry, this blog, has become a bit of a promo roll and has lost its way. That’s the reason we’ve changed things around, so this can be back to basics, as a place where LSQ can blog, tell about what’s going on with MH, post inspiration, etc. In the meantime there’s been a few changes with the blog- a page for recipes, a place to see what’s on TV and now, just recently this AM, a “contact us” page- we know it’s not perfect but we’re working on it, we promise!

    All that being said, we appreciate you sticking by us and we’re working on making mh.com be the most user-friendly, mad hungry-focused, easy-to-navigate page it can be.

    MIKE & CARLA: Lucinda’s new cookbook is set to be released FALL 2012. We don’t have an exact date yet, but when we do, we’ll let you know ASAP.

    MIKE, DARIA & JANET: We have no dates to set taping at the moment for the new show, but as LSQ blogged about last week (http://blog.madhungry.com/2012/03/whats-new.html), Calder and & LSQ are working on writing up what the new show will look like and how it will take shape. When we have more details about possibly shooting, etc. we will absolutely let our fans know. As for radio, a few years ago Lucinda had a radio show titled, EatDrink where she’d talk to food professionals and experts about timely topics (cookbooks, food news, techniques, etc.). When Mad Hungry started taping in 2010, it became too hectic with her schedule and it was put on hold. Now that we are not constantly shooting TV, we’re trying out a new style of radio and hope to do more shows (we had our first about two weeks ago), I think the next one will be in April but that has not been 100% confirmed yet. When we have a date, we’ll let our fans know- It will run probably from 5-6PM but ALWAYS will be on Sirius XM Channel 110.
