This Week’s Mad Hungry MY Way comes from Lisa Frady-Davis, who fitted the MH Roasted Veggies recipe (and cooking technique) to her family’s needs
“Viewers should take seriously Lucinda’s encouragement to adjust her recipes to suit you. I recently made Oven-Roasted Vegetables based on her general recipe, but it was dinnertime at decision time, and just had to use whatever was handy. The carrots, radishes, and onion turned out perfect. The sugar snap peas and zucchini were overdone, but still tasty! I’ve learned I probably should cut the zucchini in half length-wise instead of quartering, and sugar snap peas were probably not the best choice. But hey, live and learn! My family still gobbled up the whole pan!”
