Just tried cranberry (borlotti) beans in lieu of cannellini – super creamy bean with just a hint of earthiness. Dried cannellini are very difficult to find here.
I use all kinds of beans in everything I make. The raddichio recipe with chick peas from your guest John Contratti a few weeks back,was one of the best. I now have that added to my collection of recipes with beans. Can’t wait to make today’s recipes.

Lucinda you ROCK!!! Love your recipes. My little girl and I watch every day. Watching this episode now. Greens and beans are my favorite. Never tried dry beans before but they are on my list for the market. Thanks for the episode on cast-iron pots. I have a few from my grandmother and now know how to take care of them. The best part of beans is that they’re inexpensive. Loved the recipes you shared. Commenting to Steve (above) I too made the raddichio recipe from teacher John Contratti. I experimented with canellini beans. As it was good, I agree with Mr. Contratti’s recipe, chick peas go best with it.
I found this teacher to be exceptional. I hope to see him share more recipes in the future.

Lucinda – I have been watching you for the past few weeks and you differently rock. You have great recipes which are easy to follow and good to eat. I’m truly to add beans to my diet and both of your bean dishes delicious. I uses canned canellini beans for the Tuscan dish and Kidney beans for the other recipe. Didn’t have all of the ingredients so just added spinach or arugula instead. Both dishes were great and they fill you up. Thanks Lucinda for two great dishes.
Love your show- down to earth recipes-watch you all the time ( record it always ). I don’t know why
they cut out your shows for the other chef. Very disappointed. I would very much rather you be in there!
