Recipes From Today’s Show: Easy Chicken Menu

Published by

TODAY on MHTV: When CQ was in college he came up with an awesome chicken dinner and today, he’s here to help me make it. Baked chicken thighs are basted with a mustard/honey glaze—they’re nice, crispy and full of flavor. Then a giant hash brown, drizzled with pan drippings from the chicken, is served on the side along with a light salad. The best part about this meal is that you can adjust it to your tastes or whatever you might have in the fridge! More from the show.

This websiter is not as user friendly and when you go to search for a recipe it takes you to Martha’s website. When doing an advanced search it deos not show LSC anywhere under the show titles. Today I made the poached eggs in tomato sauce. Thank goodness I’m in the buisenss and I keep an open mind because this would normally be a dish I would turn away from. It was amazing, I served it the way she suggested, with sauted spinach and toasted bread and she is correct, it would great for breakfast, lunch, or dinner.

    Hi ML,

In our main post about the 11:00 a.m. ET show we always link to the second show that airs at 11:30 a.m. After the recipes from the 11:00 a.m. ET show, there is a link that says, ‘Get the recipes from the 11:30 a.m. ET show…” with a link that will take you directly to that show page.

All of the Mad Hungry recipes are housed within Martha Stewart.com and can be found in the Mad Hungry Show Archive (the link is on the right hand side of the blog) or by searching marthastewart.com.

    Here’s a direct link to today’s 11:30 a.m. ET show, Chicken Fricassee:

    Hope that helps!

    Thanks,
    Sam

Lucinda,I love how you involve your family in your show.I enjoy watching how you interact with your sons, you are such a great Mom. I also love seeing young guys with an interest in cooking. Plus, Calder is such a cutie! Thanks for sharing your family with us.

In your chicken fricassee recipe, can I switch out the vegetable oil with olive oil?

  • Meredith February 12, 2011 at 10:51 pm

This recipe rocks! I prepared this evening for my family and it was a hit. A do-over for sure….thanks LSQ and Calder for sharing. Love the show!

i made “mad hungry” lentil soup. the lentils never softened. i cooked and cooked it and added water. what do i do with a pot full of lentils that are still very chewy? obviously do not want to throw them out.

Your son may be able to come up with a recipe while in college, however, it’s apparent he didn’t pay attention to proper grammer. When he comes on the show, I automatically turn it off because I “like” don’t want to “like” listen to him. If he is on TV, he “like” needs to think about how he “like” comes off.

I love when you cook with your son, Calder. He’s a fine young man!!! 🙂 🙂

By the way Cindy, if you’re going to criticize someone, at least make sure your spelling is correct. Grammar is spelled with an “ar”.
    🙂 😉 🙂 🙂

    Keep up the great work!
    Cheers.

To Cindy McDonald: MH is a show with a casual setting and features young adults and a teenager. Of course their speech is going to be peppered with the idiom of their generation. They are not news readers, for Pete’s sake. Indeed, they are very polite, deferential and proud of their accomplished mother, Lucinda. Further, they have all the characteristics necessary to becoming fine, contributing members of our society despite the kid’s use of the word “like”. They will outgrow it. So lighten up Cindy.

    Lucinda,

I love when you cook with your son. Simply wonderful. I would also like to see you bring back teacher/cook John Contratti. I, like many, are followers of his blog and his great recipes. We all hope he’s back again very soon.
Hope physical therapy is going well.

Well said, Jane M. Calder is a young man that any mom should be proud to have as her own. I hope my own little man (5 yo) grows up to be just as respectful and loving (and helpful in the kitchen!) as Calder is to Lucinda! I hope my daughter someday brings home someone just like him. LSQ, hope your ankle’s getting better. I’m a PT, so I have to tell you to keep up with your exercise program!! 😉 Take care of yourself and don’t over-do it!

p.s. we had your chicken enchiladas salsa verde recipe for dinner tonight (again) – delish!

On your 1/12/2012 t.V. show, you prepared wine cookies. I can’t seem to find the recipe. Can you help. Thanks.

Trying to save the Baked Chicken recipe like I do the rest and it isn`t working. Help!

  • Steven January 16, 2012 at 7:49 pm

I just want to say…really, really enjoy the show Lucinda. And, when you have the boys on, even better. The family atmosphere is super and you are an inspiration for families to be together, cook together and communicate together. You can just feel the love! 😉

    The Mad Hungry Cookbook…excellent.

So maybe a Mad Hungry Cookbook v.2?

Of all the MH chicken recipes, the baked chicken with honey whole-grain mustard glaze is my all time favorite. I make almost weekly and every smidgen of it is consumed with great relish.
