    I’m about to make this with my daughter, who is nearly 3 and afraid of the mixer, so this recipe should be perfect. I measured out all the ingredients for her so she can just dump them into the pan. (Made the frosting while she was napping so the noise wouldn’t scare her!)

    Does anyone happen to have a link, or remember the recipe for, the frosting she made with this cake? I know it was nice and easy, but I forgot to write it down as I was watching the episode, and then accidentally deleted it from my DVR. 🙁 Thanks!

    thank you for the web todays recipe did not say how much melted butter for the cupcakes I was able to look it up Love Love the show can not wait to go to Colorado to cook for my GrandBoys

    @Valerie, here is the recipe for the Simple Buttercream frosting that was made on the show.

    2 cups (4 sticks) unsalted butter, room temperature
    1 pound confectioners’ sugar, sifted
    1 teaspoon vanilla extract
    1/8 teaspoon salt
    Directions
    1.In a mixer bowl fitted with a paddle attachment, combine butter, sugar, vanilla, and salt. Beat on high speed 2 to 3 minutes, scraping down the sides of the bowl occasionally.

    It is a bit trying to access the recipes.
    When you request one the computer goes back to the original or second screen.
    It took several tries to get to the chocolate cake recipe, but eventually I found it.
    If you would try it yourself and see that it is not that user freindly

    Last night I made the Busy-Day Chocolate Cake for company. It was so easy and quck to make. I substituted cold coffee for the cold water which made it even richer. I did find the quantity of frosting to be too much for an 8″ square pan, but otherwise it was delicious and enjoyed by all.

    She is so informative, and, obviously, has taught me sooooo much. She is wonderful! I love so many of her recipes and I would love more, except that I am always watching my weight, so I have to be particular. However, my kids have not been disappointed…and ne’er a weight prob. So, life and food are good for them! Anyway…Anybody….your thoughts? I would relish the opportunity to hear from you. Although writing is good too…

    I just adore Lucindas’ new cooking show and watch it religiously. When this busy day chocolate cake was aired I couldn’t wait to make it… especially based on the reviews. Well, i made it today. i did follow another bloggers idea of substituting cold fresh coffee for cold water. with that said… the cake tasted ok… absolutely nothing wonderful… just ok. If the truth be known… my son didn’t really like it, but I thought it was a fine recipe for the times you might be in a pinch and without eggs. Although, i didn’t believe I’ll prepare it again. But thank you lucinda for your terrific show… i just love Mad Hungry!

    Mmmm…good….I thought there was a mistake in the recipe when I saw there were no eggs…who ever heard of making a cake without eggs..well..now I have.. and guess what? It’s very good and moist and very cakey.. try it you will like it…

    Can this be doubled? Love this recipe & my family agrees it is great without frosting!
