Recipes from Today’s Show: Eggplant Rollatini

Published by

TODAY on MHTV: I had so much fun visiting with a fourth-grade class in Garden City, NY, last winter that I invited their teacher, John Contratti, to come on the show and share some of his favorite recipes: an easy, cheesy eggplant rollatini and a savory side dish of sauteed radicchio and endive tossed with chickpeas and walnuts. More from the show.

    Lucinda,

Great guest today. Being a teacher, I just discovered you this summer.
John shows what teachers should be all about. “Being Creative”. The food looked outstanding. I can’t wait to try his side dish.

    Sincerely,
    Jackie

    Lucinda,

I’m a big eggplant lover. I always thought rollatini would be time consuming to make. Your guest John made it seem quite simple to prepare. He appears to be a natural cook/chef. I would love to see him share more recipes with you on Mad Hungry.

    Lucinda,

What a delightful gentleman you had on today. Quite the professional cook.
The show flew by watching the two of you cook such wonderful food.
I would like to see the two of you cook again. He no doubt has a talent for cooking.

    Dear Lucinda,

My cable provider is Verizon, so when I saw that Mad Hungry’s guest was teacher John Contratti I thought it was a new episode. I still watched the repeat episode and once again loved it. Please bring him back to cook. He was my favorite guest cook from last season.

    Thanks,
    Helen

I remember when this episode originally aired and how much viewers enjoyed it with their positive comments. I fully agree. It’s basically a “NO-BRAINER”. This guy should be cooking again on Mad Hungry. I hope viewers will get to see him very soon.

    Hello Lucinda,

A++++ for guest John Contratti. It’s quite apparent how organized he must be with his students by the way the recipes flowed so naturally. The vegetable side dish looked awesome.
Lucinda, you have discovered someone, and by the reaction of your loyal viewers, I have to agree with the comment from Jess, it is a no-brainer, this guy should be back sharing some more dishes with viewers. People are always discovering new talents out there, and you certainly have with this guy. Kudos to you LSQ.

    Hi Lucinda,

Just read that you are filming 50 new episodes of Mad Hungry. I hope today’s guest has been back to film one of them already. I’m sure he’s an excellent teacher, but I can see he is a terrific cook. Can’t wait to see him again.
    Hooray for 50 more episodes!

I can’t tell you how 50 new Mad Hungry episodes excites me. (It’s the little things like this that make my day.)
As for today’s episode, I found the recipes to be top notch. This gentleman is more than a teacher, he’s a COOK!!! I DVR each day and watch at night. I hope I turn on the show in the Fall and I see this gentleman cooking again with you. He so deserves to show off his cooking talents once again.
Has Calder been filming with you??

Lucinda, I have watched your knife skills. Very impressive !! I see that you use a Misona 440. After going to their website, I see that there are several. Could you tell me which knife you use and do you use the same one for cutting meat as well as cutting veggies.

    Thank you,

    Nancy

    Dear Lucinda,

Congratulations on 50 more episodes. You so deserve it ! Today’s guest is a perfect example why Mad Hungry is such a special show. I love the closeness of friends and family. That’s what makes your show so appealing. Yes, please bring today’s guest back . It’s like catching up with an old friend.

I caught just a few minutes of this episode as I was walking out the door yesterday morning. I have an eggplant in my fridge that needed a different take on it than eggplant parmesan. Thanks for a new recipe, just in time. I look forward to making this dish.

  • laura July 28, 2011 at 1:45 pm

When I try to get a recipe all that comes up is a picture of the recipe and a blank screen.

  • Terri August 5, 2011 at 3:02 pm

I made these recipes last night. They were delicious. Does anyone know why Lucinda is so selective when answering on her blog? These two recipes and episode received such great feedback from viewers and there wasn’t even a response to any of our questions and comments. As a viewer I’m always interested to see what other people are saying and love when the host of the show responds to us.

  • Alan Wilhite August 8, 2011 at 5:43 pm

I made this eggplant dish and really like it. The second time I made it I brushed the eggplant slices lightly with garlic-herbed olive oil and then baked them in the oven at 400 for 15 minutes. This saved the step of cooking them on the stove top. I think baking them in the oven added a layer of flavor and was easier for me do do in quantity. I am adding this to my book. Thanks so much!~

  • Marc August 24, 2011 at 4:58 pm

I finally made this recipe of eggplant and it was so great. The side dish I made weeks ago and loved that too.
Looking back,I just don’t understand why Ms. Quinn did not not make one comment on this blog. So many viewers commented about the super recipes and the wonderful guest of the day, and she made no mention of either. Everyone is congratulating her on 50 new episodes, but still nothing. I find that extremely unprofessional and rude. If she didn’t comment on other day’s blogs I could understand it. Going through the daily blogs, she’ll have one comment for the whole day and she’ll comment back to that one. Why have a blog if you can’t take the time to respond back to your viewers? It shows disrespect to viewers who take the time to watch and write each day. I know so many people who have never heard of Mad Hungry and even that a Hallmark Channel exists. You think people would be more gracious.

Fabulous! John Contratti’s recipe is wonderful. I knew John back in our college days. His mother is an amazing cook so he comes by the talent naturally. Thank you for sharing this food with us. I will try your recipe at home with my two boys. John must be an amazing teacher. What a great show.
