TODAY on MHTV: Greek food is all about fresh, simple ingredients that create flavorful meals, and today’s menu is no different. Lamb chops drizzled in a fresh mint sauce and my mom’s healthy white bean salad go great with chive pita chips. More from the show.

I love that the shows are on here right away so we can post. I am now watching the other half of Mad Hungry where LSQ has another helper. I have to say that she is doing great. If you saw my earlier post I had gotten two more cookbooks. I get goosebumps every time I tell someone about them or even look to see what I am going to cook next 😛 I am making Pineapple Upside-Down Cake and the Beef Patties today out of the Lucinda’s Authentic Jamaican Kitchen book. I have one question: What size skillet do I use for the cake? (I made the Limeade and the Jackass Corn already 😛 And I am soo looking forward to making the Clams with Linguini!)

    Kathy,
Use a 10-inch seasoned cast iron skillet or an 8×8 inch well buttered square or round baking pan. Good luck. Best, LSQ

I made that pineapple upside down cake and it is superb; comes right out of the cast iron skillet. All one has to do is follow Lucinda’s directions. My two youngest grandsons were impressed when they saw the cake drop out of the skillet and onto the plate perfectly. They were even more impressed when they ate a piece of the cake.

Thanks LSQ! The Meat Patties were all eaten, my son ate 10 of them (growing 15 y/o) lol And the cake came right out also! And my husband shoveled the cake down and told me how good it was in between bites 🙂

I have been wondering. You have 3 boys and a husband how come you are always cooking 4 pieces of meat instead of 5. Love you and your show. When do the new ones start.
