Recipes From Today’s Show: Jerk Chicken

TODAY on MHTV: It’s no secret that I LOVE Jamaican food, especially the classics, like jerk chicken. A garlic and scallion marinade really helps to boost the flavor and an extra helping of spicy jerk sauce doesn’t hurt either. To soak up some of that heat, I’m making festival; a lightly fried sweet cornmeal bread with hints of vanilla and allspice. More from the show.

    I love all your recipes,but I can not find your macaroni and cheese that you made when your neice was cooking with you. It looked very good. Thanks Marian

    The only thing missing from this Jamaican cuisine is rice and peas, a tasty rice dish with the sweetness of coconut milk and subtle flavor of red beans; adds the missing flavor. For those who prefer a milder chicken, jalapeno peppers work well in place of scotch bonnet. My Jamaican friend also added a little soy sauce, which gave it a hint of saltiness. She simmered the chicken all afternoon until it literally crumbled at the thought of a fork coming near. The jerk chicken that we got had little fragments of bone in it, because at that time they did not debone their chicken before cooking it. Instead, they took a machete to the meat, bone and all. I imagine the festival takes the place of the rice and peas as a starch or filler, and am anxious to try it. Our last visit to Jamaica was more than 20 years ago and I’m sure festival isn’t the only change that’s taken place since then.

    Top that with a bottle of Ting or Ginger Beer, or for those choose something stronger than pop, a rum punch, and you’ll find yourself singing Jamaica Farewell. Perhaps it’s time for us to make another trip.

    Omgah it was soooooo freagin good! The festival was such a hit too!!! I love you Lucinda! I’ve hand written about 30 of your recipes as I watch the show an they are all 5 stars for me and my hubs!

    Wasn’t there a beans and rice dish also featured with this episode? This sounded so good with the jerk chicken. I’m not able to find the recipe for this anywhere – with this episode or others. Help?

    I made this for a dinner party I was having to welcome an old friend back to Las Vegas. It was so flavorful and different. Everyone at the table enjoyed this dish and is one of our new family favorites. I can’t wait to taste it again

    the jerk chicken and all the rest look so good . I can’t wait to make this for my friends. a couple of them really like vary hot ,so they should like this.
