Recipes From Today’s Show: Weekend Cook

Today on MHTV: Mexican food is a Quinn family favorite so today a I’m cooking up a feast. In order to make really down-home Mexican food, you really have to put the time in. The husks need a good soak and then, I make the tamale dough; it’s the perfect “weekend kitchen project” so I’m making Tamales two ways: Cheesey Jalapeño and Shredded Chicken. Blistered tomatillos, jalapeños and onions make Salsa Verde to top the tamales and and colorful fruits are blended with a bit of sugar and lime create a refreshing Aqua Frescas to drink.

    The tamales look great, but that eggplant rollatini and Mr. Contratti were simply the best yesterday. He seems to have a fan club and I’m one of them. Hope Mad Hungry does the right thing and brings him back when the show resumes.

    I made a pan of the eggplant rollarini you and John made on the show on Wednesday. It was one the best meals I’ve made in a long time. I will now watch you each day. If I wasn’t a follower of John’s blog, I wouldn’t have known about your program. I’m so glad he’s made so many people aware of Mad Hungry.

  • Why can't I pull up recipes from the April 12 show on Hallmark? April 13, 2012 at 12:58 pm

    I wasn’t able to write down the chicken with vegetables recipe Lucinda did on 4/12 so I am trying to get it from this website with no luck. You are showing different recipes or perhaps my area is on a different schedule? Help!?!

    Yum! We’ve been making a lot of Mexican dishes at Kendall (my culinary school) and I hope it never ends. There hasn’t been a bad dish yet!
