You might have seen me on the TODAY show this morning, I was on demoing my January Mad Hungry column in Martha Stewart Living Magazine where I focused on updating the TV dinner (many times my kids dig into food while on the computer so I’ve been calling them the “PC” dinner). I showed how to make a homemade Salisbury Steak with Onion gravy, Potato and Carrot Mash, Creamed Spinach and Apple-Cherry Cobbler that can be put in one container, frozen and reheated as needed- Click above for a gallery of behind the scenes photos orĀ check out the segment here.

Hi Lucinda, Was so sorry I did not get a chance to see you on the Today program. Your pictures were great, and I enjoyed them. You are my favorite cook, and I get so many wonderful ideas from you. I watch you everyday on Hallmark station. Here’s hoping you will not be taken off the air.

Our son, a college student, was pleased to return to school with the six delicious frozen dinners in tow. Thank you for the great recipes and the method to get it all together. Now I am hoping for a new permutation, perhaps with a chicken entree???
