Meanwhile, back to the chicken. The beauty of this dish
(amongst other things) is that the flavor improves if made ahead. Prepared mid day while I still had energy and reheated before dinner deepens that rosemary-garlic-vinegary glaze. And, since there was only one chicken in there stretching was the name of the game. First technique was to hack the chicken (back bone, wing tips and all) into small pieces before cooking which gives the illusion of more food. And, if you love bones it’s a boon for you (I do).
Multiple sides which edge into that aforementioned sauce means enough abundant platefuls to sate the five ravenous appetites around here. This morning, the few leftovers had been scarfed post midnight as evidenced from the plates left in the sink (this is an ongoing battle I haven’t given up on, btw). So, I can’t say it enough–shopping is half the battle for home cooking. All ingredients for this meal where purchased on the weekly shopping ship.

very good recipe! my family loved it. I think I tried to do too much however. With polenta, minted peas AND the mushrooms. It was all good, but too much to try to do at one meal. I think your recipes are wonderful, but you make it look MUCH easier than it really is in 1/2 an hour!.
This was a wonderful recipe! I used it with boneless pork chops instead of chicken and adjusted cooking time. Very cook with oven roasted potatoes, carrots and onion!!!
