Recipes from Today’s Show: Albanian Family Recipes

TODAY on MHTV: Have you ever eaten something and HAD to have the recipe? That’s what happened when my friend, Milot, shared a slice of spinach pie with me. Called Byrek Mi Spinaq in Albanian, it’s stuffed with a creamy spinach filling and layered between sheets of buttery phyllo dough— it’s super easy to make; today he’s here with his mom to share the recipe with me. To round out the meal, we’re making kadaif, a sweet dessert made of shredded phyllo dough and lemon syrup, and Turkish coffee to go with it. More from the show.

    love these kind of shows, Lucinda! I cannot wait to try these recipes! That spinach pie is sooooo much easier than the one I use. Can’t wait to compare and lucky me… I just bought 3 bags of spinach and have phyllo in the freezer!

    Lucinda, Here is a shortcut for making kadaif, the dessert you featured today:
    You can use Shredded Wheat! (the large biscuits, not the bite-size). Just tear the biscuits apart and put them in the pan and continue with the butter, nuts and lemon syrup. So easy and tastes very much like the shredded phyllo dough!
    My mother is Albanian and I grew up with these dishes. My grandmother always made her own phyllo dough. She used a broom stick to roll it out and was able to get it paper thin. (Mine always looked like hole-y rags….) Even Nana used the Shredded Wheat trick for the dessert.

    oohh that’s a fun tip on the shredded wheat. I love those big ones but never seem to eat the whole box; this’ll be a must try.
