Recipes from Today’s Show: Chicken Parmesan Dinner

TODAY on MHTV: Chicken Parmesan is one of my favorite things to make for Sunday dinner; I prep everything in the morning and then assemble and bake it right before we’re about to eat.  The chicken is breaded in homemade breadcrumbs—they’re really easy, fast and add a lot more flavor than the store-bought stuff. To make sure there’s enough green on everyone’s plates, tender, blanched spinach is drizzled with olive oil and lemon juice for a healthy side. Lemon souffle pudding sounds hard but is actually a snap, and it’s the perfect, light dessert after a hearty meal.

    I love Mad Hungry from “Day 1”. Loved Lucinda’s recent message. I look forward to Mad Hungry returning “somewhere”. Please bring back John Contratti. His blog has kept me going since January, because Mad Hungry is nothing but repeats.

    Please keep us posted on any MH news. Commenter Dina is so right. Mr. Contratti’s blog is viewed every day. I’ve seen all of Mad Hungry’s episodes, made all the recipes that I wanted, so I’m so glad Mr. Contratti is out there with exceptional recipes to choose from. With the rumors that Mad Hungry is alive and well and will return, it would be outrageous if this gentleman is not brought back to cook with the sensational Lucinda. Lets get the show back on with new episodes.

    I love your recipes, they are not too complex yet the results are really great. But on today’s show the chicken parmesan was not the same as the recipe on your web site. On the show it was baked (which I prefer) and the one on the web site was cooked in oil. Would it be possible to get the recipe she made on the show? (8/10)

    I have a lot of problems finding the recipe,s of
    mad hungery, like to-day baked chicken, and the
    other,s of to-day. 8/10/2012.
    thier needs to be a better way of geting your
    recipes on the web.

    I wanted your recipe for the chicken thighs and drumsticks that you fixed on todays show. It was not posted on the web, but Chicken Parmesan was. This is not what you fixed. I missed the chicken recipe on your show, but I do remember you saying that you remember the salad dressing that your Mother always used for this recipe. I would love to have this recipe, plus the cucumber and red onion. Couldn’t find it on the web for today.

    Parmesan Romano Chicken and the Cucumber , red onion salad plus salad dressing. on the red onion. Your mother used,

    Was a different show aired and thats why the recipes don’t match ? I didn’t get to see the show today? Thanks Van for Mr. C.’s website. I just spent an hour looking through it and printed out over a dozen recipes.

    There are so many recipes on Mr. Contratti’s website that I would love for him and Lucinda to cook together. Please tell us that he will be back when Mad Hungry starts filming for its new “venue”.

    For instance if something you are eating says it has two servings per package at 500
    calories for the whole package, but is 250 calories per serving,
    you can’t tell yourself you are only eating 250 calories,
    you are really eating 500. If you want to know what
    the best burn belly fat program is, then you might want to
    shift your sights away from the numerous fad diets coming out every season.
    Even thought the amount of calories is lesser than of
    fat, alcohol calories are completely useless.
