Recipes from Today’s Show: Go-to Rigatoni Meal

TODAY on MHTV: You want to make dinner fast but you also want to make it taste good. A quick-cook meat sauce poured over rigatoni is a snap and packed with flavor thanks to diced mortadella, a slow smoked Italian sausage. For a little green veg, I’m making lightly steamed shaved broccoli topped with a few red pepper flakes, a side from one of my MSLO food editor colleagues, Kris. For dessert, a smooth, creamy mocha panna cotta can be made in advance and is served cold. More from the show.

    I’m mad for “Mad Hungry”! I only wish I had these recipes 20 years ago when my family was young and at home. I tried the flat chicken roast, and it was easy and delicious. Now when my family show unexpectly and “mad hungry”, I’ll have these quick and delicious recipes at my finger tips. Thanks Lucinda.

    Just a quick note to say thank you for your brilliant book. I have two 21 year olds who come home from university tired bad and mad hungry. So far they have loved Cuban style pork, lasagne, meat balls and egg and bacon bagels.. Hooray you have made my life a little bit easier and meal times have become a pleasure. Many thanks.     I can’t tell you how much I love your show! I have tried several recipes and I look forward to all new episodes. If I can make a suggestion (rather a request), I would love to see more shows like the freezer meals, pantry meals, or meals for two. Presently, it is just my husband and me at home. We are both professionals and so I would like recipes that work with a busy schedule but are creative and fun. Although, I must say I also love your big family style recipes too; they really help when we entertain or visit my family back home. Again, I love the show and wish you the best.

    Dear Lucinda,
    I cannot torture my family with heavy cream. Could I make the Panna Cotta with low fat or skim milk? Won’t be the same rich feel, but since there is gelatin is should same firm up the same way. Please advise! Your show is the best.
