Recipes from Today’s Show: New Twist on Flat-Roast Chicken

TODAY on MHTV: You’re all pretty familiar with my flat-roasted, or spatchcocked, chicken. This is the same approach except this time I’m giving it a boost with Asian flavors.  I’m roasting the bird with citrus, soy, and garlic and serving it with a side of coconut rice and a beet and watercress salad.     Hey LSQ! Is it your Birthday?? Happy Birthday to you!! It’s my hubbs bday too. I think I’ve passed out your corn salad recipe 10 times already this summer! It’s a huge it!!!!!! My 5 year old daughter has a playdate on Friday and I’m bringing Dolly’s chocolate bundt cake for the moms to share! Can’t wait!!

    I saw this yesterday on TV and I just need to make this chicken. However, I never saw a brick used during the show. I only saw the chicken “smushed” before it went into the marinade.

    I’m confused.

    I made this entire meal for a family gathering. We were a group of 5 and I bought chicken parts instead of having to get 2 chickens. Mom & I cooked together. Everything was delicious! We all enjoyed the meal together!! Thank you Lucinda!
