Recipes from Today’s Show: Spaghetti and Meatballs

Published by

TODAY on MHTV: Spaghetti and meatballs is a timeless dish, and one that everybody prepares their own way. My meatballs are a combo of beef and pork, but you can use any type of ground meat you like.  Since this is a hearty meal, on the side we’ve got a light, crisp romaine salad full of crunchy veggies and a no-cook, fuss-free dessert of sweetened ricotta mixed with chunks of chocolate. More from the show.

PS: How do you make your meatballs? Tell us in a MH My Way entry and send to madhungrylsq@gmail.com

Keep up the great work!! Love you and your show. Have tried most of your recipes with my family and they loved them. Would like to buy some of your kitchen utensils. Where can I purchase them?
Thanks again for all your ‘cooking’ insights.

Just love your show; sorry, but at times I like it better than Martha’s. Maybe that’s because I like to cook and you make it seem so easy. Thanks. Laura

Was never crazy about potato salad. Then one day I was looking to fix lunch & saw some potatoes that needed to be used. Next I saw some sour cream in the fridge. OK! Baked potoes then! Then I thought what if I mix potato salad with 1/2 mayo & 1/2 sour cream! WOW!!! What a difference! It seemed to add that little something that traditional potato salads always seem to lack. Todays recipe sounded good as well and I will try those spices! You simply must try my secret ingredient as well!

Your show is fantastic! Brings the basics back into focus, especially for the modest cook! I really enjoy the realness of the show as well. You are so easy to connect with. I must say that you really create a soft cozy feel to your kitchen. Thanks for sharing and keeping it interesting! I’m hooked on Mad Hungry!

Lucinda, Watching your show, I realize I should have been teaching my sons and husband to cook long ago. However, it’s never too late! I have introduced them to your pasta alla checca and they couldn’t believe something you set on your counter could taste so delicious. I’ll try the cold sesame noodles and stir-fried chinese chicken and peanuts next. My husband will be helping with your quick fried chicken tonight. Love your cookbook, each son will get their own for Christmas. Can’t wait to see each episode, thanks again.

I want to know more about the cookware as well! I’ve been eyeballing it since I found this show. There was a little mention of it in this episode, maybe we can get a blog post?

I have been trying to think of a way to tell you how much I love your shows.

My husband will get his first Social Security check next week. He has never cooked anything in his life. After watching your show for a few weeks, he is cooking. He is cooking eggs. He can make an egg sandwich and a grilled cheese sandwich.

I cannot believe that is my husband. One day while we were watching you he said, “she makes it look like anyone could cook!” It’s the first time I ever realized he was afraid to try.

I didn’t think we could be any happier until tonight. He has a thing for cannoli. He goes to a local bakery about twice a week for them. He asked me try to learn how to make them for him. I said no way. I am not going to compete with this wonderful Italian Bake Shop. But I can make the ones you had on your show today. I have the chocolate chips, the cheese and the fruit. All I need to go get are the biscotti. You can tell I am not Italian by the way I am spelling these Italian foods.

Thank you! You are going to be really big. We have watched all the others but you are the best and our favorites. I love it because it’s all stuff that I have. I don’t have to search for special ingredients.

Thank you and keep up the wonderful work. I love it when your sons and nieces are on too. We really do need to bring back the family meal.

I have to agree that the milk soaked bread really makes these meatballs tasty, mine were always hard or overcooked. Thanks!

Loved the juicy meatballs !It is absolutely the best meatball recipe I ever tried.
Lucinda, you are the best. I DVR all your shows and print the recipes afterward. You give so much valuable information while cooking.

I have got to have that wooden utensil you use almost in every show!!! What brand is it and where can I buy one!! Love love your show and family, I myself am Italian and have grown kids which I have taught to cook!!

I made the meatballs exactly as written but was I disappointed. These tasted nothing like Italian meatballs. The ground pork, even lean, made it too greasy and the use of the Romano cheese, which is much too expensive for everyday use, wasn’t necessary, in my opinion. If recipes cannot be adapted to everyday users, then they are not worth the effort or expense. Most recipes that call for wine need an alternative liquid for those of us who simply do not like the taste of wine in their food. As for additions like cheeses, a less expensive cheese should always be included that would make a suitable substitute. These meatballs had no Italian herbs and tasted more like something that would be expected with perhaps Swedish meatballs with a type of white sauce over noodles. Italian recipes without either oregano, basil, marjoram or tyme, or a combination of all, is simply not Italian.

Lucinda, could you share your favorite brand of whole tomatoes?

  • Laura November 9, 2010 at 4:19 pm

OMG!!!!Finally a real erson who knows what life is all about. You are the very first show I’ve seen that anyone could watch and not even think that you are fake. Thanks for the ideas and hints.

I love your show…and I’m Italian. Olive Oil is so essential in most of your recipes…what brand is your favorite to cook with? Same with pasta…what brand do you prefer to use?
Thanks for all your wonderful and quick tips!
