Recipes From Today’s Show: Easy BBQ Menu

TODAY on MHTV: My family loves BBQ—really, who doesn’t?—with a little make ahead prep, it’s perfect for a weeknight meal. I soak pork shoulder chops in a flavorful beer-infused marinade to keep them juicy, then brush them with a tangy BBQ sauce before I toss them on the grill. For some green, a crunchy kale slaw drizzled with a peanut dressing won’t last long and a spicy side of corn on the cob coins with Scotch bonnet peppers simmer away on the stove while the chops are on the grill.     I watch your show everyday and I am interested in your cookware that you use. Especially the cast iron grill for indoor barbequing on top of the stove and also your cooking pots and pans and cassoles that appear to be enameled. What is the brand and where can I purchase them?     I so enjoyed watching your son help you prepare the BBQ ribs and coleslaw today. It was such a warm experience and I loved your relationship. He is a great young man, very sensitive and intelligent with a knack for cooking too. Looks like you and may well follow in his mum’s footsteps.

    MS: Cast iron pans and grill pans are generally available at housewares and hardware stores. The new ones have to be seasoned though. My favorite way to find these items is at tag sales, flea markets and on-line sites such as Ebay.

    As for the enamel cast iron, the brand is called Le Creuset–also found at many cookware stores and sites. One of my favorite styles used to be called a “paella pan” (although I use it as an all-purpose pan) but now they are referred to as “braisers.”

    Kale Slaw is not what I viewed on Mad Hungry Feb 15th,2011 show,it looked like cabbage,tomatoes,seeded cucumber,Lucinda was using mayo,think sour cream,honey,it was not Kale Slaw with Peanut Dressing,This was disappointing not to find the exact recipe she was using.

    I recently watched Mad Hungry for the first time. It was great! Lucinda prepared the BBQ pork shoulder chops. She mentioned a meat rub that she uses. It contains salt, cocoa, paprika, cayenne, and cumin. What are the proportions? I like your program because you prepare “real” food!! Thanks!
