TODAY on MHTV: It’s training day here in the Quinn house and I’m teaching CQ one of the most important skills to have in your culinary arsenal: how to roast a chicken.  As usual when we cook chicken, we’re cooking in pairs; both birds are rubbed with herb butter and shallots and roasted on top of a bed of red onions. On the side, a veggie-bread salad is full of cucumbers, red peppers, and crumbly feta cheese. More from the show.

    I just made the Lemon Tarragon Roast Chicken tonight and.. my husband loved it!!!! Thank you Lucinda for teaching me how to cook! I am so lost in the kitchen and you are a guiding light. I can now make healty and tasty meals for my kids and husband. Thank you so…. so.. much!

    I am the mother of 3 grown children and the grandmother of 2 granddaughters. When my kids were still at home cooking was an everyday thing and something I enjoyed. Once they were out on their own I went back to full-time work and became very lazy about meals. You’re show has inspired me to get back into cooking and to teach my granddaughters as well. Thank you!

    Hi! I saw you make your vege-bread salad which calls for Pugliese bread, I am having trouble find it in Dallas, so i was wondering if a Calamata Olive bread cubed would work in that salad and if you don’t think so could you suggest another that would work.

    Just made the roast chicken tonight and I think it’s the best one I’ve ever made! SO good and SO juicy!
    Fortunately, I made two chickens.
